What I love most about chicken is the hundreds of ways it can be prepared.  I could eat chicken every single day as long as it was prepared differently each time.  This recipe is very simple and extremely easy to prepare but adds a little something special to a traditional plain chicken breast.  In the pictures the bacon even makes it appear to be lobster tails.  I now have a new idea for a future post.

Ingredients:
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
2 cloves garlic, crushed
4 slices Swiss cheese
4 slices cooked ham
1 tablespoon fresh parsley, chopped
1/4 teaspoon paprika
8 slices bacon

Instructions: Preheat oven to 350° F.  Grease baking dish with nonstick cooking spray. Pound chicken breasts to 1/4 inch thickness.  Sprinkle each piece of chicken on both sides with salt and pepper. Spread each breast with garlic then place 1 cheese slice and 1 ham slice on top of each. Roll up each breast and wrap chicken with 1-2 slices of bacon.  Bacon will keep chicken from unraveling.   Place in baking dish sprinkle with parsley and paprika then bake for approximately 30 to 35 minutes, or until chicken is no longer pink.  Broil on high for approximately 3-5 minutes until bacon is browned, and Voila!
