There are so many ways these Sauteed Mussels with Garlic can be served. You can stick some toothpicks in them and serve as an appetizer. You could also serve over pasta or rice as an entree. No worries if you can’t find fresh mussels in your area, the frozen ones will work just fine.
2 pounds fresh/frozen mussels juice from half lemon 6 tablespoons extra virgin olive oil 2 shallots, chopped finely 1 garlic clove, crushed 1 tablespoon fresh parsley, chopped 1 ½ teaspoon paprika ¼ teaspoon dried chili flakes
Instructions: Remove mussels from shell. Heat olive oil in large pan, add mussels and cook, stirring for a minute. Remove mussels from pan and set aside. Add the shallots and garlic, cover and cook over low heat for approximately 5 minutes, until soft. Stir in parsley, paprika, chili, lemon juice then add the mussels with any juices. Cook for additional 1-2 minutes, remove from heat, cover and let stand for 1-2 minutes prior to serving.
Tips: If cooking fresh mussels be sure to clean shells. Cook mussels in 1 cup of boiling water for 3 minutes. Remove mussels as they open. Discard any mussels that do not open.
