I told you before that my mother-in-law is a chef.  This is one of Chef Feirouz’ many delicious recipes.  Please don’t let the list of ingredients intimidate you, this recipe is pretty easy to make. If you don’t have an extensive spice rack all of the spices should be easily found in your local grocery store. I will be posting more Moroccan recipes in the future so the spices you have to purchase will be put to good use. Okay, back to the Sweet Potato Tagine… this tagine is unique.  The sweetness of the honey and brown sugar mixed with the spiciness of the harissa and dried chili pepper is absolutely delicious.

Ingredients: (Serving for 2)
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon white pepper
1/2 teaspoon salt
1/2 teaspoon coriander seeds
1/4 teaspoon harissa
1/4 teaspoon turmeric
1/4 teaspoon cinnamon
1 pinch saffron
3 garlic cloves, crushed
1 pinch grated nutmeg
1 tablespoon brown sugar
3 tablespoons honey
6 tablespoons extra virgin olive oil
3 sweet potatoes, peeled and cut
2 whole dried chilies
2 cinnamon sticks
1/2 bunch cilantro
Chicken breast, leg and thigh
1/2 cup chicken stock
1 cup water

Instructions: Marinate chicken with the following: 1/2 of the cilantro, 1/2 of the garlic, cumin, paprika, salt, saffron, nutmeg. Set aside. In preheated tagine or pot add olive oil, garlic, harissa, cinnamon, coriander seeds, turmeric, white pepper, chicken stock, water, cilantro, cinnamon sticks. Cover and cook on high heat bringing to a boil then adjust to medium heat and cook for approximately 15-20 minutes. Add sweet potatoes. Coat sweet potatoes with broth. Cover and bring to a boil. Add honey, sugar and chilies. Cover and cook for 10 minutes until sweet potatoes are tender.

Tips: To brown the chicken I usually remove the chicken and place on cooking tray and broil in oven for a couple minutes.  When doubling the recipe you do not need to double the spices.  You can simply add ¼ teaspoon more.  A little bit will go a long way.  Lastly, remember to manage your heat so your ingredients don’t burn on the bottom of your pot/tagine.
